This soup mix is full of dried lentils, split peas and barley so doesn’t need many other vegetables to make it into a at hearty meal. First sweat the pancetta, onions and garlic in a little olive oil. Stir in the vegetables then add the soup mix, the stock and a tin of tomatoes. Simmer until the vegetables are soft, then add the past for the last ten minutes. You may need to add more water at this stage. Taste and season with salt and pepper. Serve sprinkled with parmesan and a slice of warm ciabatta bread.
