INGREDIENTS (serves 4):
Preheat the oven to 180/Gas 4. Fry the spring onions and garlic in a non-stick ovenproof frying pan over a medium heat until soft. In a bowl beat the eggs, stir in the potatoes, beans, olives and tuna. Add in the softened onion mix, season, then pour the whole mix back into the frying pan and cook gently, until the eggs are lightly set at the bottom. Place the frying pan in the oven for 5-10 minutes until cooked through. Allow to cool slightly and serve with a tomato salad drizzled with some balsamic vinegar.
